Even though I am a carnivore at heart,
I love to dabble in some veggies now and then.
AND.
I love cheese.
Especially goat cheese.
Mom made an easy delicious salad because she is getting bikini bod ready and I'd like to share the goodness with you!
Arugala salad with figs & goat cheese
Ingredients:
A bunch of arugula
1/4 cup of crumbled goat cheese
3 large mission figs or any figs that are available to you
good balsamic vinegar
good extra virgin first press olive oil
s & p
Method:
Wash and dry arugula.
Wash and dry figs and slice to about a 1/4 inch thickness
Throw in the goat cheese
Mix together balsamic, evoo, s&p (amount depends on your taste)
Enjoy for a light lunch or add grilled shrimp/chicken/filet for a delicious dinner!
